Liquorice

Licorice (Glycyrrhiza glabra), is considered as one of the most valuable medicinal plants and is already in use for about 4000 years. It is used for drug production, but also for confectionery production.

Pure licorice is about 50 times sweeter as sugar. The cultivation takes place in the cities of Kermanshah, Fars and Kerman. The plant grows up to 1 meter - in some areas of Iran even up to 2 meters. The 9-17 leaves are 7-15 cm long and require a lot of sun and heat. The harvest begins in fall, after 3-4 years of growth.

A tea made from grated licorice should help with coughs, gastritis and liver disease. Today, research has proven, that an active substance, extracted from the root, called glycyrrhizin, has an antioxidant and antiviral effect.

A mixture of sugar, glucose syrup, flour, potato starch, ammonium chloride and flavors grants a sweet and tart sly.

Dried licorice rods are also chewed for dental care.
